保鮮庫 庫溫一般為0℃~5℃

主要用于鮮肉、乳品、鮮蛋、果蔬等的保鮮,使食品處于較低的溫度環(huán)境下,而溫度又不低于0℃,在這種環(huán)境下,食品可以盡可能的保持新鮮。
Preservation storage is applied to preservation of meat and dairy, fresh eggs, fruits and vegetables etc. to make the food at a lower temperature, but the temperature is not lower than 0℃. So that it can keep the food fresh as long as possible.
冷藏庫 庫溫一般為-15℃~-18℃

速凍庫 庫溫一般為-30℃以下

主要用于食品的速凍,如速凍肉、速凍水餃、速凍蔬菜等,要求在限定時(shí)間內(nèi)迅速將食品凍結(jié)。
Mainly applied to the freezing food such as quick-frozen meat, quick-frozen dumpling, and quick-frozen vegetables which should be frozen rapidly in the limited time .
低溫庫 庫溫一般為-22℃~-25℃
Cold-chamber general temperature -22℃~-25℃
主要用于庫溫在-22℃~-25℃時(shí)的食品貯存。只有在這個(gè)庫溫條件下,食品才不會(huì)變質(zhì)。例如冰淇淋儲(chǔ)藏時(shí)溫度高于-25℃,它的香味就沒有了,海鮮食品高于這個(gè)溫度貯存,它的鮮味和口感就差多了。低溫庫的特點(diǎn)是:不定期的逐步地將食品放入冷庫,經(jīng)過一段時(shí)間,對這段時(shí)間內(nèi)的庫溫沒有特殊的要求,冷庫的庫溫達(dá)到-25℃,待庫內(nèi)的溫度恒定后,對冷庫的庫溫要求非常嚴(yán)格。
